This is a favorite at my house, and people actually start to beg for Apple Cake if it's been too long since the last time I made it.  It was a recipe of my grandmother's, or so I was lead to believe many years ago as a child, however, now I do not know from where this recipe came to be in my possession, but it's a keeper despite its questionable lineage.

Preheat oven to 350 degrees.

2 cups sugar   *   1 cup shortening   *   3 cups flour   *   3 eggs
1 tsp. baking soda dissolved in ½ cup warm water
1 tsp. cinnamon   *   1 tsp. nutmeg   *   1 tsp. vanilla   *   1 cup pecans
3 fresh apples, peeled, cored, and cut up in pieces

Cream together the sugar and shortening.  Then add flour a little at a time until all is added.  Add eggs one at a time and mix after each addition.  Add the soda in the water and stir.  Add cinnamon and mix, add nutmeg and mix, and add vanilla and mix.  Mix in nuts and fold in apples.

Bake in a greased and floured tube pan for 1 hour and 10 minutes at 350 degrees.

A cold winter day is a chance to get warm and toasty in the kitchen. Sid's Broccoli Soup (named Sid in honor of my father's friend who passed away too many years ago) is sure to defrost even the coldest of toes. It’s a fast and easy meal to make at a moment’s notice. Before the first cold day hits, I make sure I stock up on the fixins’ for this soup cause you never know when the mood will hit, and I’ll have to throw on the apron.

Broccoli Soup

1 can condensed cream of mushroom soup
1 can condensed cream of onion soup
1 can condensed cream of celery soup
Big bag (16 oz.) of frozen chopped broccoli
4 cups of water


Place all ingredients in a 8-quart soup pot and heat over medium-high heat to a boil. Reduce the heat to low. Cook for 15 minutes or until the broccoli is tender.

Serving Suggestions: alongside a grilled cheese sandwich or corn bread or even garlic bread.

Helpful Hints: At times because of circumstances beyond my control, I have had to substitute soups flavors. Some of the soups that work equally as well in place of one of the soups listed above are: cream of potato and cream of chicken.
